Smoked hassle back potatoes
Today I smoked hassle back potatoes on my pit boss.
Smoked at 400° for 45 min. Added cracker size cheese, sliced chicken, bbq seasoning and bbq sauce. Then back on to the smoker for 5 more mins to melt the cheese. Topped with bacon to complete the meal! Hope y’all enjoyed the quick video. Have a wonderful day!

Cooked 5 gal of jambalaya… Started with 3lb of jalapeño cheddar smoked sausage Cubed 7lb pork butt Cubed 5lb boneless skinless chicken thighs Pre-cut onions,bell pepper and celery Minced garlic 5 quarts of chicken stock, if you cook more, you can add water 5lb of parboiled rice I use a 1:1 ratio of liquid to rice

Today I did the internet trend of smoked cream cheese… I seasoned one with chupacabra Cajun blend and the other with mojo bbq… Placed on my Wagner Ware flat skillets… Scored the tops… Set the smoker at 225° and smoked for 1 hour… I had Ragin’ Cajun jalapeño relish to top with also… Definitely one of my go-to recipes for any occasion…
Adding a fryer to my catering trailer | welding | bbq trailer

In this video I add a extra 9 gallon 3 basket fish fryer to my bbq catering trailer. I had it built by the same guy that built the trailer. I had a big catering job and my previous fryer wasn’t enough. That’s the reason for adding another one. Hope y’all enjoy the video.

Today I decided to do a simple recipe for anyone wanting to smoke ribs! If you’re a first timer, this is the video for you! My tip to starting your rib cook is... 250° for 3 hours, wrap and place back on the smoker for 1 hour. Keep smoker at 250°. The seasoning I used is Mojo Bbq. The hot sauce I used is mule sauce. Spritzed with water every hour. Hope you enjoyed the video!
Smoked beef tenderloin | pitboss 820D pellet smoker | simple and easy

Today with the help of my little buddy, we smoked a USDA prime beef tenderloin. Trimmed and seasoned with MOJO bbq. Fired up the pitboss 820D pellet smoker to 300°. Cooked to internal temp of 120°. Basted with melted butter and Italian seasonings, let it rest and sliced. This turned out amazing! Enjoy everyone!

With the help from my son, we did a smoked queso on my pellet smoker. Ingredients include... 2lb block of velvetta 8 oz block of pepper jack cheese 1 lb of ground beef 1 can cream of mushroom 1 can diced tomatoes 1/2 yellow onion diced 1 tbsp bbq seasoning Black pepper This recipe was a family hit. Ribs on my new smoker

Smoked a couple racks of ribs on my big smoker today! After it leveled out at 300°, I seasoned these St Louis cut spare ribs with Mojo BBQ magic. After a hour and a half, I rotated them to get an even cook. At the 3 hour mark, I decided to pull and let the rest for 45 min. Hope y’all enjoyed!

We had a family party to attend and I made a quick and easy hot wing meal. All I did was clean the chicken, pat dry with paper towels and dropped in vegetable oil at 400°. Today I did smashburgers on my Blackstone griddle. This is a quick and easy recipe for anyone to do at home. I used a fresh baked kieser roll, 80/20 ground chuck, mozzarella and pepperjack cheese, horseradish mustard and seasoned the meat with SPG. This burger turned out great. Thanks for watching!

    Hello, thank you very much for posting this tutorial on how to cook a great brisket. This was my very first time ever cooking on my pellet smoker. I followed your recipe and it was the best brisket I have ever eaten. I did this last weekend and my daughter was here and she has a very finicky daughter herself and she absolutely loved it. today I cooked a whole chicken on my pellet grill and it turned out great. I just put on a pork butt shoulder roast and it is cooking right now. Hopefully it turns out just as good. Thanks again for your help and advice. Bruce.

    I put my two racks on. 3.25 lbs. each rack. I used a my own rub with no binder. I have a YS palette smoker. 250 degrees for 4 ours. I spritz the ribs with water/apple cider every hour. I have wrapped sometimes and others times I have not. I usually flip them around at the 3 hour mark since I do get a bit more heat on one side. I always let them sit for about 20-25 minutes. They have turned out really nice evetime.

    after the initial "sear" what temp did you cook to? Love seeing the old PKs still doing their thing. I just got one and put it together today and it is bomb proof! What an awesome tool!!

      I think I took this one to 128°. Depending on your location, that temp will fluctuate. (ie humidity,cool-cold weather, hot-warm weather)

    I've been using the 321 method for many years now, but it seems that almost every UA-cam video I come across on making ribs uses the 321 method. The 321 takes about 4 to 6 hours. To be totally honest, I've had GREAT results on my pellet smoker without using the 321 method and it takes about the same amount of time. I've actually just let my ribs go on 250 for about 4-1/2 without spritzing and they came out fine. I think the 321 method is great if you only have one grill and you plan on doing a lot of cooking. You can actually do the 2nd step in an oven so that you can use your grill for something else. I'll usually cook wings or something else while my ribs are simmering in the oven in foil or butchers paper. Those look great by the way!

    Thank you for your video I've watched many on UA-cam and yours cut out the BS and got right to the point on how to cook it right. Unfortunately my landlord wouldn't let me fire up my pellet grill stating it was a fire hazard but I did cook the Brisket in the oven and it came out perfect following your steps. thanks again and just a side note I was living Denham Springs for about 6 years after hurricane Katrina and I miss you'll big time thanks again.       You can use a smoke tube. I’ve seen many people do it. Personally, I don’t use one. If I want more smoke, I’ll use my stick burner.

      Mike at custom Metal Projects in Beebe, Arkansas built the trailer and fish cookers. When I ordered the trailer, I only had one fish cooker built. I found out that I needed another one, so I had him build a mirror image of the one on the trailer.
